Easy Smoked Vegetables

These easy smoked vegetables are slow cooked on the smoker for about 45 minutes, until delicious smoky aroma and flavor is imparted.

Equipment

Ingredients

  • 1 sweet onion peeled and quartered
  • 1 red pepper cleaned and cut into squares
  • 2 zucchinis sliced thick
  • 1 cup Brussels sprouts trimmed and cut in half
  • 1 cup mushrooms halved
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat your smoker on the Smoke setting.
  • Place all of the cut vegetables in a mixing bowl.
  • Mix together the olive oil, Worcestershire sauce, salt and pepper in a bowl until well combined. Pour it over the vegetables and toss to coat. Transfer the veggies to a grill-safe tray.
  • Place the tray on the smoker and smoke for 15 minutes on the smoke setting. Then turn it up to 225°F for 30 minutes.

Notes

If you don't have a smoker you can bake these vegetables on 375°F for 30 minutes instead.
