Ingredients

  • 2 pounds (907 g) chicken wings separated into drumettes and flats
  • 1/4 cup (59 ml) tequila
  • 1/4 cup (59 ml) fresh lime juice about 2 juicy limes
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30 ml) honey
  • 4 cloves garlic minced
  • 1 teaspoon (2 g) cumin
  • 1 teaspoon (2 g) chili powder
  • 1 teaspoon (2 g) smoked paprika
  • 1 teaspoon (6 g) salt
  • 1/2 teaspoon (1 g) black pepper
  • 1/4 cup (4 g) fresh cilantro chopped
  • Lime wedges for serving

Instructions

  • In a large bowl, combine the tequila, fresh lime juice, olive oil, honey, minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper.
  • Add the chicken wings to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • Preheat your grill to medium-high heat (around 400°F, 200°C).
  • Oil the grill grates to prevent sticking.
  • Remove the wings from the marinade, letting any excess drip off. Discard the marinade.
  • Place the wings on the grill in a single layer. Grill for about 20-25 minutes, turning occasionally, until the wings are cooked through and have a nice char on the outside. The internal temperature should reach 165°F(75°C).
  • Once the wings are done, remove them from the grill and let them rest for a few minutes.
  • Sprinkle with fresh cilantro.
  • Serve with lime wedges on the side for an extra burst of citrus.

Notes

  • Allow the wings to marinate for at least a few hours, or preferably overnight. This helps the tequila, lime, and spices to deeply penetrate the meat, ensuring every bite is packed with flavor.
  • For the best results, cook the wings over medium-high heat on the grill or in a preheated oven. This will give you crispy skin and juicy meat. Keep an eye on them to avoid burning, and turn them frequently for even cooking.
  • Just before serving, squeeze fresh lime juice over the wings. This adds a burst of freshness and enhances the overall tangy flavor, making the wings even more delicious.
