Ingredients

For the Alabama white barbecue sauce:

  • 1/2 cup (118 ml) mayonnaise
  • 2 tablespoons (30 ml) white vinegar
  • 1/2 tablespoon (7 ml) mustard
  • 1 teaspoon (5 ml) horseradish
  • 1/4 teaspoon (1.5 g) salt
  • 1/4 teaspoon (0.5 g) ground black pepper
  • 1/8 teaspoon (0.38 g) garlic powder
  • 1/8 teaspoon (0.25 g) paprika

For the blackened seasoning:

  • 1 tablespoons (7 g) paprika
  • 1/2 tablespoon (4 g) garlic powder
  • 1/2 tablespoon (4 g) onion powder
  • 1/2 tablespoon (2 g) dried thyme
  • 1/2 tablespoon (3 g) dried oregano
  • 1/2 teaspoon (.5 g) cayenne pepper adjust to taste for spiciness
  • 1/2 teaspoon (1 g) ground black pepper
  • 1/2 teaspoon (3 g) salt

For the sliders:

  • 1 pound (454 g) chicken cut into 3” pieces
  • 1 tablespoon (15 ml) olive oil
  • 8 slider buns or dinner rolls
  • 1 cup (72 g) iceberg lettuce shredded
  • 16 dill pickle slices

For the butter topping:

  • 2 tablespoons (30 ml) butter melted
  • 1/2 tablespoon (2 g) fresh parsley minced
  • 1/2 clove garlic minced

Instructions

  • Combine all sauce ingredients in a bowl and whisking until smooth. You can prepare it up to 2 days in advance and refrigerate.
  • Combine all blackened seasoning ingredients in a bowl. Mix until combined. Unless using immediately, transfer to a sealed container until ready to use.
  • Coat the chicken pieces in olive oil and blackened seasoning.
  • Heat a skillet to medium high and add the remaining olive oil.
  • Once the pan is hot, add the chicken tenders and cook for 3 minutes per side, until the internal temperature reaches 165°F (75°C). Transfer to a wire rack.
  • Mix together melted butter, garlic and parsley in a small bowl. Turn the oven to broil. Toast the undersides of the split slider buns until they are golden brown. Remove bottom buns and set aside. Flip the top buns right side up and spread the tops with the melted butter mixture. Place top buns back under the broiler for 1-2 minutes until lightly toasted.
  • Top each slider roll with a piece of chicken, some lettuce, Alabama white sauce, and pickles.

Notes

  • Ensure your chicken breasts are well-coated with the spice rub for that classic blackened flavor. Don’t be shy with the seasoning; the spices will create a delicious crust when seared.
  • Cook the chicken on a hot grill or griddle to create a nice char on the outside. This high heat helps to lock in the juices and intensify the flavors.
  • Enhance your sliders with fresh toppings like crispy lettuce and pickles. These add a refreshing crunch and balance the spicy, tangy flavors of the chicken and sauce.
