Equipment

Ingredients

  • 1 pound (454 g) ground beef
  • 1 pound (454 g) ground chorizo resembles ground pork
  • 1/2 cup (80 g) diced onion
  • 2 teaspoons (6 g) garlic powder
  • 2 teaspoons (4 g) paprika
  • 1 teaspoon (2 g) cumin
  • 1 teaspoon (6 g) salt
  • 1/2 teaspoon (1 g) black pepper
  • 1/2 cup (57 g) shredded cheddar cheese
  • 2 jalapeno seeds removed and chopped
  • 2 tablespoons (30 ml) olive oil
  • 4 hamburger buns
  • Toppings of your choice

Instructions

  • In a large bowl, combine the ground beef, chorizo, diced onion, garlic powder, paprika, cumin, salt, and black pepper. Mix until all the ingredients are evenly distributed.
  • Divide the meat into 8 equal portions and form into thin patties. Make an indentation in the center of each patty to create a well for the cheese.
  • Place some cheese and diced jalapeños in the center of half of the patties.
  • Top each with another patty and press the edges to seal, forming stuffed burgers.
  • Preheat the grill to medium-high heat.
  • Place the chorizo burger patties on the grill and cook for about 4-5 minutes on each side, or until they reach your preferred level of doneness.
  • Lightly brush the burger buns with olive oil and place them on the grill to toast for a minute or two.
  • Serve on buns with your favorite toppings and condiments, such as lettuce, tomato, avocado, and salsa.

Notes

  • To save time, prepare the chorizo burger patties in advance and store them in the refrigerator until ready to grill.
  • Ensure the grill is preheated to medium-high heat before cooking the burgers to achieve a perfectly charred exterior while keeping the interior juicy.
  • If you don’t like chunks of onion in your burger patties try grating the onion in. The pieces are smaller and it adds flavor and moisture to the patties.
