In a large bowl, combine the ground beef, chorizo, diced onion, garlic powder, paprika, cumin, salt, and black pepper. Mix until all the ingredients are evenly distributed.
Divide the meat into 8 equal portions and form into thin patties. Make an indentation in the center of each patty to create a well for the cheese.
Place some cheese and diced jalapeños in the center of half of the patties.
Top each with another patty and press the edges to seal, forming stuffed burgers.
Preheat the grill to medium-high heat.
Place the chorizo burger patties on the grill and cook for about 4-5 minutes on each side, or until they reach your preferred level of doneness.
Lightly brush the burger buns with olive oil and place them on the grill to toast for a minute or two.
Serve on buns with your favorite toppings and condiments, such as lettuce, tomato, avocado, and salsa.
