- Ground beef – You can use any ground beef but I prefer a butcher’s trio of brisket, chunk and short ribs, because it has more fat, flavor, and it sticks together easier. You can get Butcher’s Trio pre-made patties at Safeway or Vons.
- Ground chorizo – You want the ground chorizo that resembles ground beef, not the chorizo in the tube.
- Onion – Diced or grated.
- Spices – Garlic powder, paprika, cumin, salt, and black pepper.
- Cheddar cheese – I use sharp cheddar cheese, but this is also very good with pepper jack cheese for an added spicy kick.
- Jalapeno – You can decide the heat you add to the filling by taking all or most of the seeds and white ribs out of the peppers before you chop them.
- Olive oil – Canola oil, vegetable oil, or butter can be used as substitutes.
- Hamburger buns – We use brioche or regular hamburger buns.
- Hamburger toppings – Use your favorites. Lettuce, tomato, avocado, and salsa work well.
Equipment Needed
- Grill – I use a Weber Genesis E325 for most of my grilling, though I also have a Z Grills Smoker/Grill combo that I sometimes use. You can use whatever grill you have, whether it’s gas or charcoal.
- Propane or Charcoal – Depending on your setup.
- Grill Tools – I swear by this set of sturdy grill tools from Cuisinart that includes everything you need for grilling, like tongs, a flipper, a digital temperature fork, silicone basting brush, and more.
- Meat thermometer – Many smokers have a thermometer built in, but if you don’t have one you’ll want to get an instant-read thermometer like this awesome Thermapen.

- 1 pound (454 g) ground beef
- 1 pound (454 g) ground chorizo resembles ground pork
- 1/2 cup (80 g) diced onion
- 2 teaspoons (6 g) garlic powder
- 2 teaspoons (4 g) paprika
- 1 teaspoon (2 g) cumin
- 1 teaspoon (6 g) salt
- 1/2 teaspoon (1 g) black pepper
- 1/2 cup (57 g) shredded cheddar cheese
- 2 jalapeno seeds removed and chopped
- 2 tablespoons (30 ml) olive oil
- 4 hamburger buns
- Toppings of your choice
Instructions
- In a large bowl, combine the ground beef, chorizo, diced onion, garlic powder, paprika, cumin, salt, and black pepper. Mix until all the ingredients are evenly distributed.
- Divide the meat into 8 equal portions and form into thin patties. Make an indentation in the center of each patty to create a well for the cheese.
- Place some cheese and diced jalapeños in the center of half of the patties.
- Top each with another patty and press the edges to seal, forming stuffed burgers.
- Preheat the grill to medium-high heat.
- Place the chorizo burger patties on the grill and cook for about 4-5 minutes on each side, or until they reach your preferred level of doneness.
- Lightly brush the burger buns with olive oil and place them on the grill to toast for a minute or two.
- Serve on buns with your favorite toppings and condiments, such as lettuce, tomato, avocado, and salsa.
