Brookies are the best thing to happen to dessert in a long time. They’re a rich and chocolatey part-brownie part-cookie in a single super-noshable dessert.

If you’ve not tried one of these yet, put everything down and get to the kitchen. I promise this is a super simple recipe and you won’t be able to contain yourself as their baking (or maybe that’s just me!). Before they were even out of the oven I was ready to pounce.

I mean, who doesn’t love a brownie and better yet, a hot-out-of-the-oven chocolate chip cookie. Now imagine a marriage between the two. Equal parts rich chocolate cakey brownie and buttery chewy cookie, rolled into one. Love brownies? Make some extra batter and try these easy brownie ice cream sandwiches for the perfect summer treat.

Okay, I think I’ve done enough convincing, especially since these brookies require none. Let’s get to the recipe!

What You’ll Need to Make Brookies

To make this recipe super easy, we’ve used prepared cookie dough and boxed brownie mix. You can use which ever brands you prefer. We use Pillsbury Chocolate Chip Cookie Dough and Ghirardelli Double Chocolate Brownie Mix. Or you can make your own with your favorite recipes. Here’s a recipe for homemade chocolate chip cookies.

Brookies can be made with just cookie dough and brownies, but we punch ours up a notch by adding a mix of Oreo cookies and Reese’s Peanut Butter Cups. If you prefer, you can use all Oreos or all Reese’s Peanut Butter Cups. We do half and half for a little variety. You can also leave these out entire to cut down on calories.

How to Make Brookies

Preheat oven to 350° F and lightly grease a cupcake pan.

Divide the cookie dough into 12 balls. Put one ball of cookie dough in each cupcake well. Push down to flatten.

Add the peanut butter cups to half and the Oreo cookies to the other half.

Mix up brownie batter per package instructions using eggs, oil and water. Fill each cupcake well with enough brownie batter to fill 90% full.

Bake for 22 minutes, or until the top of the brownies are no longer wet.
