This recipe is ideal for those looking to add a bit of excitement to their usual grill fare, making it a great choice for both casual weeknight dinners and weekend cookouts. This sweet and spicy honey sriracha sauce adds so much flavor to just about anything.

Ingredients You’ll Need

  • Pork chops – Bone-in pork chops about 1 inch thick.
  • Olive oil
  • Salt & black pepper
  • Garlic powder
  • Smoked paprika
  • Sriracha – The most important ingredient in this sauce is the Sriracha. I prefer Huy Fung Foods Sriracha with the rooster on the bottle. Another brand that’s good is Flying Goose Sriracha with the goose on the bottle.
  • Honey – You want to select a good quality honey. Preferably one that is fresh and in liquid form. Honey can get crystallized over time, which won’t work as well for this sauce.
  • Butter – Salted or unsalted is fine, whatever you have on hand. We prefer salted for this recipe.
  • Soy sauce – I always use low-sodium soy sauce, because it has a lot less sodium in it.
  • Lemon juice – freshly squeezed, if possible.

Equipment Needed

Helpful Tips

  • Allow the pork chops to marinate in the honey and sriracha mixture for at least an hour before grilling. This helps the flavors penetrate the meat, ensuring each bite is packed with the perfect balance of sweet and spicy.
  • Grill the pork chops over medium heat to avoid burning the honey in the glaze. Honey can caramelize quickly, so it’s important to keep an eye on the chops and flip them frequently to prevent charring while achieving a beautiful, caramelized crust.
  • After grilling, let the pork chops rest for a few minutes before serving. This allows the juices to redistribute throughout the meat, resulting in tender and flavorful chops. A brief rest also enhances the overall taste and texture of the dish.

Ingredients

  • 4 bone-in pork chops about 1 inch thick
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (6 g) kosher salt
  • 1/2 teaspoon (1 g) black pepper
  • 1/2 teaspoon (2 g) garlic powder
  • 1/2 teaspoon (1 g) smoked paprika

For the honey sriracha glaze:

  • 1/4 cup (59 ml) sriracha
  • 3 tablespoons (44 ml) honey
  • 1 tablespoon (14 g) salted butter
  • 2 teaspoons (10 ml) low-sodium soy sauce
  • 1 teaspoon (5 ml) lemon juice

Instructions

  • Preheat your grill to medium-high heat (about 400°F 200°C).
  • Rub the pork chops with olive oil to help the spices adhere.
  • In a small bowl, combine the kosher salt, black pepper, garlic powder, and smoked paprika. Generously rub this spice mix all over the pork chops, ensuring they are well-coated. Let the pork chops sit at room temperature while you prepare the glaze.
  • Mix together all ingredients in a small saucepan. Bring to a boil over medium-high heat.
  • Reduce heat to medium-low and continue to cook for about 5 minutes, until the sauce has reduced and thickened slightly.
  • Place the pork chops on the grill and cook for about 4-5 minutes per side, or until the internal temperature reaches 145°F 65°C).
  • During the last few minutes of grilling, brush the pork chops with the honey sriracha glaze. Flip the chops and brush the other side with more glaze, allowing it to caramelize slightly but not burn.
  • Once the pork chops are done, remove them from the grill and let them rest for about 5 minutes.
  • Serve the grilled pork chops with extra honey sriracha glaze on the side for dipping.
