- Butter – Salted or unsalted is fine, whatever you have on hand. We prefer salted for this recipe.
- Soy sauce – I always use low-sodium soy sauce, because it has a lot less sodium in it.
- Lemon juice – freshly squeezed, if possible.

- Grill – I use a Weber Genesis E325 for most of my grilling, though I also have a Z Grills Smoker/Grill combo that I sometimes use. You can use whatever grill you have, whether it’s gas or charcoal.
- Propane or Charcoal – Depending on your setup.

- Meat thermometer – Many smokers have a thermometer built in, but if you don’t have one you’ll want to get an instant-read thermometer like this awesome Thermapen.

- 1/2 teaspoon (2 g) garlic powder
- 1/2 teaspoon (1 g) smoked paprika
For the honey sriracha glaze:
- 1/4 cup (59 ml) sriracha
- 3 tablespoons (44 ml) honey
- 1 tablespoon (14 g) salted butter
- 2 teaspoons (10 ml) low-sodium soy sauce
- 1 teaspoon (5 ml) lemon juice
Instructions
- Preheat your grill to medium-high heat (about 400°F 200°C).
- Rub the pork chops with olive oil to help the spices adhere.
- In a small bowl, combine the kosher salt, black pepper, garlic powder, and smoked paprika. Generously rub this spice mix all over the pork chops, ensuring they are well-coated. Let the pork chops sit at room temperature while you prepare the glaze.
- Mix together all ingredients in a small saucepan. Bring to a boil over medium-high heat.
- Reduce heat to medium-low and continue to cook for about 5 minutes, until the sauce has reduced and thickened slightly.
- Place the pork chops on the grill and cook for about 4-5 minutes per side, or until the internal temperature reaches 145°F 65°C).
- During the last few minutes of grilling, brush the pork chops with the honey sriracha glaze. Flip the chops and brush the other side with more glaze, allowing it to caramelize slightly but not burn.
